A Baked Potato Supper for Friends

On Saturday evening just gone, we had some friends over to ours. There ended up being seven of us. It was a casual evening spent catching up (without kids) and putting the world to rights over a few bottles of wine.

I promised to provide everyone with some supper and tried out this rather brilliant idea: a jacket potato bar. It was low cost and low effort on my part, but such a fun and well received supper to have on an wet and windy autumnal evening.

I laid out an assortment of bowls, dishes and cutlery and piled up the hot baked potatoes on a bread board with a butter dish beside it. For fun (and simply because I can never do anything too simple) I made some little ‘filling suggestions’ cards and tied them onto each of the baked potatoes with some string.

I laid out bowls of ‘fillings’ for my guest to create one of my suggested combos or indeed design their very own. So what was on offer? A homemade 3-bean chilli made a few days before and left to ‘improve’ in the fridge before quickly heating through, grated cheddar, brie, soft goats cheese, smoked salmon & fresh dill, spinach, avocado, soured cream, capers, cranberry sauce, lemon wedges and course-ground black pepper.

It’s such an easy way to feed guests, when they out number places at the dining table. I would do it again without doubt.

And for those of you wondering was there pudding? Of course there was! Dark Chocolate & Ginger Cake served with crème fraîche. But on this occasion, I think it is fair to say that the humble spud took centre stage.
